Hot Water Cornbread

  • cups cornmeal
  • 1/4 teaspoon baking powder
  • 1 1/4 teaspoons salt
  • teaspoon sugar
  • Approx. 1 tablespoon oil (I used olive oil)
  • 3/4-1 1/4 cup boiling water (this may vary and you may need more to get it to the correct consistency)
  •  oil for frying

~Directions~

  1. Combine first 4 ingredients in a bowl.
    Bring water and oil to a boil; Gradually add boiling water, stirring until batter is the consistency of grits. I like mine a bit thicker.

    Pour oil in skillet (preferably iron skillet) and heat over medium high heat.  Wet hands in cold water and carefully form patties with your batter mix.  Take care it is hot.  Fry approx. 3 min. each side or until golden brown.  Serve immediately.

    These are good with beans, greens, or we even drizzle honey and butter over them and enjoy as a snack.
